'absolutley nuts about health'

boom salad: (serves 4)

1 courgette

2 red kale leaves

1/2 leak

2 pak choi

4 red chard stems

1 chicory

5 mibuna leaves

2 white chard leaves & stems

90g of green olives

handfull of feta cheese

3 eggs

 

put the eggs onto boil, while you wait for the eggs chop everything up and put into a deep salad bowl. drizzle with oil of your choice (i used caratino oil, really tasty) and some sweet chilli sauce. toss and add feta cheese, olives and eggs (chopped). give it another quick mix around and up and down then serve with a bread of your choice (walnut or rye bread with houmos goes down a treat). feel free to make and store in the fridge, the salad will keep for 2-3 days.

simple but tasty!!
